Gluten- Free and Nut- Free Tiger Nut Zucchini Bread
Let’s talk Tiger Nuts. Many of you may be thinking tiger nuts are in fact “nuts” based on their name, right? In fact, they are tubers, similar to sweet potatoes, yams, or Jerusalem artichokes! Not only are these wonderful tubers high in prebiotic fiber, plant- based protein, and healthy fats for your little ones, but they are also nut- free and gluten- free!
We wanted to share this yummy zucchini bread for all you mamas who are always looking for a great, easy recipe for your nut- allergic or gluten- free babes. This tiger nut flour zucchini bread is not only packed with nutrients, but won’t disappoint!
Ingredients:
2 cups grated zucchini from 1 large zucchini or 2 small zucchinis
4 tablespoons unsalted butter
½ cup unsweetened applesauce
½ cup honey · ¼ cup whole milk
1 teaspoon vanilla extract
2 eggs
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ¾ cups tiger nut flour
Directions:
1. Preheat oven to 350 degrees.
2. Spray a 9x5-inch loaf pan well with cooking spray and lightly flour the pan.
3. Wrap the shredded zucchini in a clean kitchen towel and squeeze out the excess moisture. Set aside.
4. Place the butter in a large bowl and melt in the microwave. Let cool slightly if very hot. Add the applesauce, honey, milk and vanilla. Whisk until well combined. Whisk in the eggs.
5. Sprinkle on the cinnamon, nutmeg, baking powder, baking soda and salt. Whisk until well combined.
6.Add the tiger nut flour and mix with a rubber spatula until almost combined. Gently fold in the zucchini, being careful to not over-mix.
7. Transfer the batter to the prepared pan. Bake for 55 mins- 1 hr, let cool for 20 mins and then enjoy!
